The bundle that joins two of the house's anchor materials - a working sage from across the Atlantic and a rare resin from a Yemeni island. The sage carries the burn; the resin carries an undertone no other bundle in the range can match.
On the burn, the bundle opens like plain White Sage. As the heat reaches the dressed granules, an earthy-leather note threads through with a faint dried-rose underneath. The resin melts into the bundle and chars to deep red on the dish.
Reached for sparingly. Each bundle uses a small fraction of a 30g tin's worth of resin from an endemic Socotran tree.
